Dilly Dressing


From The New Middle Eastern Vegetarian: Modern Recipes from Veggiestan by Sally Butcher.


6 Tbsp olive oil
1 tsp honey
2 tsp mustard
2 tsp chopped fresh dill
1 tsp chopped fresh tarragon (or just use more dill)
1 Tbsp cider vinegear
1 Tbsp plain yogurt
A couple gherkins or small pickles, finely chopped
Salt and pepper to taste

Whisk it all together.  Taste the dressing on a salad leaf and adjust the seasonings.  Enjoy!
